Overnight Oatmeal

Here is the recipe for the yummy breakfast Ruth and I have been making for some time and we love it:

Overnight oatmeal

  • 1/2 Cup organic oats (buying in bulk at Whole Foods is more cost effective than the oats pictured here)
  • 2 Tbsp organic Chia Seeds
  • 1 cup of Rice milk (what we use), Almond milk, or other healthy “milk” source
  • Mix together well in a jar

 

This is the base for the oatmeal and can be covered overnight in the fridge and then in the morning, add 1-2 Tbsps fresh blueberries, cut up strawberries, sliced bananas or other fruits, honey or syrup.

 

But, the night before…. we add more to it:

  • 1/8 tsp cinnamon
  • 1 tsp peanut butter or sunflower seed butter, etc.
  • ½ tsp honey or syrup
  • Stir again.

 

To the top of the mixture, we add:

  • 1-2 Tbsp of frozen blueberries

 

Put in the fridge overnight, or for at least 4 hours. In the morning, stir all together and enjoy.

Joshua Tree National Park

A spectacular desert experience

On December 28 and 29 2015, Ruth and I visited Joshua Tree National Park. Joshua Tree National Park brings together the Colorado and Mojave Dessert in Southern California’s San Bernardino and Riverside Counties. The parks’s dessert scenery is spectacular and awe-inspiring.

 

Our first visit was to Barker Dam, where we spent several hours hiking and climbing massive rocks.

A second place we visited was Ryan Mountain which took us few hours to climb and reach the 5457 foot summit.DSCF3919

Keys View

On our second day visiting the park, we drove up to Keys View, which has a tremendous view of the Salton Sea and the southern tip of the San Andreas fault. We also stopped by the Cholla Cactus Garden and climbed a bit around Skull Rock.
